I am probably the biggest fan of recipes that are simple to follow and prepare, but the product or dish is impressive, great tasting and an all round hit. The other day I received a bowl of lemons from a neighbour and they were sitting on the kitchen counter for a few days. I’ve been thinking about baking something like a slice for a while now and the lemons all of a sudden took the leading role.
I mixed flour, butter and a little icing sugar together and pressed itinto the bottom of a square tin. While that was baking I squeezed the juice from a few lemons and mixed in eggs and sugar. When the base was a light golden colour I poured the lemon mixture over and returned it to the oven. It baked to a gorgeous lemon slice. Tangy, sweet and light. Simply delicious!
