These very popular puff pastry treats go by many other names: pigs’ ears, butterflies, elephant ears and even palm leaves. Quite frankly, I don’t mind what anyone wants to call them, they are a hit anytime at any occasion.
They are so incredibly simple to make that I find it strange that people don’t have for tea time treats more often. All you need is one sheet of puff pastry, sugar, spice and a working oven! There’s also no specialised technique required to roll and slice them – there’s really no excuse not to enjoy palmiers more often!
