Stuffed chicken comfort
Many people think that stuffing chicken fillets take too much effort and time, but to be honest, it’s not at all a hassle. Well, if you do it the way I like to do it, then it takes only a few minutes. I place the fillet flat on a chopping board and, with a sharp knife, slice it lengthways, but stop just before you get all the way through. Flip the fillet open and fill it with your favourite ingredients. I like to use dried fruit, spices and some kind of cheese.
Once filled, simply roll it up from the one side to the other and secure with a few toothpicks. Now, you don’t have to, but I like to lightly fry it in a hot pan before placing it in the oven to continue cooking.
Today I filled the chicken fillets with feta, prune and some spices. The deep sweetness of the prunes gave the intense saltiness of the feta a good go. I prepared a simple sauce by sauting garlic in a little butter then adding chicken stock and a dash of cream. I allowed the sauce to reduce until slightly thickened and added a sprinkling of paprika.
